The One-Bowl, Coconut Oil Chocolate Slice

Every other week, Nikita heads to the kitchen to test out recipes we think the mang’Oh community will love. As a twist on the usual healthy fare, our recipes are usually sweet treats that incorporate an abundance of fruits, veggies, whole grains and nuts. We believe that “real food” treats eaten in moderation can add some fun and variation to a healthy, plant-based diet. We hope you’ll try them out and let us know what you think!
I have tried a few healthy chocolate snacks or desserts (it is hard loving chocolate while trying to stay healthy) and this is by far my favorite. It is extremely rich (which means it will last you a few days because you can’t eat too much in one go) but totally addictive! The best part is that it has no added sugar so it is fairly healthy!
My new favorite ingredient is coconut oil. Not only is it n energy booster but it also helps to burn fat and it tastes amazing. I have started adding it to my smoothies in the morning and I use it in place of cooking oil. This recipe not only tastes great but it will boost your energy levels as well as cure your chocolate craving!
6 Tablespoons Peanut Butter ( I used the “no sugar added” one)
3 Tablespoons Coconut Oil
3 Tablespoons Honey
1 Tablespoon Cocoa Powder
1/2 teaspoon Vanilla Essence
1 Cup Cashew Nuts (crushed)
- Mix all ingredients together except the cashew nuts
- Once you have mixed all the ingredients together, add the cashews and give one last mix
- Pour into a silicone loaf tin
- Refrigerate ( overnight is best or until firm)
- Enjoy! Keep refrigerated to avoid it melting
